Sticky Date Pudding

Ingredients
170g pitted dates
300ml water
60g butter
170g caster sugar
2 eggs
170g SR Flour
1 teaspoon vanilla
1 teaspoon carb soda


Method
Combine pitted dates and water and boil.
Stir in bicarb soda and let stand.
Cream butter and sugar. Add eggs, 1 at a time. Mix well.
Stir in flour.
Add date mixture and vanilla.
Pour into well-greased 18cm cake tin.
Cook in oven, 160°C for 30 - 40 minutes.

Sauce
200g brown sugar
1/2 cup cream
130g butter
1/2 teaspoon vanilla essence

Combine all ingredients in saucepan and bring to boil.
Simmer for 3 minutes.
Pour over warm pudding.
Serve with ice cream and/or custard
