Lemon Cheese Cake - No Baking


Crust:                                      
200g nice biscuits
100g melted butter
25g melted copha

Finely crush biscuits. Add melted butter and copha. Mix well.
Lightly grease 20cm round tin and press biscuit mixture into base of tin and part-way up sides.
Refrigerate for 15 minutes.

Filling:
375g cream cheese softened
zest of 1 lemon
2 teaspoons vanilla essence
1/3 cup lemon juice
1 x 400g tin condensed milk

Beat cream cheese until smooth.
Add lemon zest and vanilla. Mix well
Add condensed milk and lemon juice. Mix well.
Refrigerate overnight.
