This recipe is sure to please. It is easy to make, looks good and inexpensive to make. Great for crowds or if you're going out and need to take a "plate" to share.
Base
3 crushed weetbix
1 cup SR flour
1 cup coconut
1/2 cup sugar
120g melted butter
Mix all ingredients together and press into 18cm x 30cm tin.
Bake in moderate oven for half an hour.
Marshmallow
2 cups sugar
2 cups water
2 dessertspoons gelatine
Place all ingredients into saucepan and bring to the boil, stirring all the time. Simmer for 10 minutes. Let cool.
Beat well with beater in large bowl until thick. pour over biscuit and sprinkle with chocolate, nuts or toasted coconut.
Can be flavoured and coloured as desired.
